Lemon Curd

Gluten Free – Sugar Free – Paleo – Veggie

 

Ingredients:

  • 3 eggs
  • 1/4 cup of honey
  • 1 tbsp of grated lemon zest
  • 1/2 cup of lemon juice
  • 5 tablespoons of coconut oil

 

Method:

In a saucepan whisk together honey, eggs and lemon zest. Whisk well together.

Add the coconut oil in, a spoonful at a time, so it will melt evenly into mixture. Then add the lemon juice.

Turn heat on and Cook on medium, until the coconut oil is melted and the mixture will start to have bubbles appear on the surface, keep stirring until the mixture becomes thicker. Cook gently until most of the liquid has been absorbed. Take of the heat and leave for 10 minutes to thicken even more.

You can refrigerate it before use, or use straight away.

Serve on anything you like! Great on these pancakes  or serve on a slice of gluten free  the loaf of love.
