OMG! These are amazing! I ate the lot, all to myself..
I’d trained hard so I justified it 😉
A great post workout breakfast full of healthy proteins.
Makes 4-6 pancakes
- 2 Eggs
- 1 Sweet potato
- pinch of vanilla
- dash of cinnamon
- dropperful of stevia
- scoop of favourite protein powder – I use sunwarrior vanilla
- 1 tbsp coconut oil
Blend all ingredients apart from coconut oil in a blender until smooth.
Heat the oil in a pan, over medium heat. Add 2 x tbsp for each pancake into pan, each side usually takes a minute or so until golden brown.
I served mine with extra coconut oil and hemp seeds.
