I’ve been playing with this recipe for a while, and I’m confident now that I’ve got it just right! ..Or so I’ve been told by people requesting that I make more 😉
These Muffins are great for breakfast, a healthy snack , or great for parties and birthdays. Better yet they are Gluten Free, Dairy Free and all of the ingredients are natural. Plus they include manuka honey which in it self is loaded with goodness.
I use Coconut Flour, which is amazing for gluten-free baking and for anyone following Paleo lifestyle too. It’s sometimes tricky to get the right measure of this flour as you need much less than other flour’s for baking.. if you use too much you will need more liquid to make up for it.
- 4 eggs
- 1/2 cup of coconut milk
- 1/4 cup of xylitol
- pinch of vanilla powder
Mix this in a blender until smooth then add:
- 1/2 cup of coconut flour
- pinch of sea salt
- 2 tsp of cinnamon
- 2 tbsp of Cacao powder
- 1/4 tsp of baking powder
Spoon the mixture into individual cupcake cases, I find that this makes around 12..
Put in a preheated oven at 180C for 30 mins until risen but still springy on top.
Leave to cool for 15 minutes.
Manuka Honey Chocolate Topping:
- 1/2 cup of melted cacao butter
- 1 tbsp of manuka honey
- 2 tbsp of cacao powder
- 1 tbsp of xylitol
Stir together over a low heat in a pan until the honey has melted into the mixture and the xylitol has mixed in well.
Leave to cool for 5 -10 minutes.
Then spoon on top of each muffin and place in the fridge for 20 mins until the chocolate top sets.
These are perfectly spongy in the middle and the soft gooey chocolate top is a great combination.
