I have to share this recipe, I actually came up with it by accident, using my left over veg from christmas dinner!
It tasted soooo good and even my sister loved it, so that is saying something .. her actual words were “did you make this ?! It’s really nice” in a not very well hidden surprised voice .. Love you Emzie 😉
Okay so here it is:
- 2 carrots
- 1 sweet potato
- 1/4 of a suede
- half a leek
- 1 onion
- 1 garlic
- 1 sachet of organic coconut cream
I cut everything into large cubes, added to pan, and boiled for about 20 minutes. Once all veg was tender, transfer to blender with some of the water and add coconut cream and blend. You can add more water depending on how thick you like your soups.
Add sea salt and pepper and serve!! Again another recipe you can make if you only have 30 mins to spare!
