OMG! These are the best pancakes I have had in a lonnnng time. I’ve been playing with pancake recipes for a while and only using healthy whole ingredients, these are Veggie, Paleo, Gluten Free, Dairy Free, Sugar Free and oh so good .
Coconut and Strawberry Bomb Pancakes
Here’s what you’ll need:
- 2 eggs
- half a mashed banana
- 1 scoop of protein powder
- 1 dropperful of stevia
- pinch of Vanilla powder
- Desiccated Coconut
- Coconut Oil x 1 tbsp
Whisk the eggs until frothy, add in stevia, vanilla powder and the mashed banana.
Heat a saucepan and add the Coconut oil. Keep on medium heat, add in 2 tbsp of the mixture for each pancake. They usually take about 2-3 minutes on each side. Golden brown is always better 🙂
Once the pancakes are cooked, place one on a plate, sprinkle with cinnamon, desiccated coconut and strawberries topping with a sprinkle of Xylitol.
Then place another pancake on top and repeat!
and repeat! Until you have a tower of delicious pancakes, strawberries, coconut and cinnamon yumminess!! Serve warm, the strawberries turn gooey and jam like.
This mixture made around 5 pancakes, great for sharing, a perfect weekend breakfast, brunch or dessert!!
