These little energy bites are so easy to make, quick, simple and soo tasty I can’t get enough of them!
All you need:
- 4 tbsp of Pumpkin seeds
- 4 tbsp of Goji Berries
- 3 tbsp of Coconut oil
Blend the pumpkin seed and goji berries in a food processor into a coarsely ground texture.
Melt the coconut oil over some hot water.
Add the coconut oil to the mixture in the food processor and blend again until evenly mixed.
Roll into balls and place in the fridge to set. These set super quick, so you can have your little energy snacks ready to go within 20 minutes!
The reason I love these little bites is not only for the sweet taste and satisfying energy it gives me but also because of the amazing superfood benefits in these little balls, The Goji Berry!
This little Gem is known as a adaptogen, which means it can invigorate and strengthen the system while helping the body to deal more easily with stress by supporting the adrenal glands. They also boost the immune system, increase alkalinity, provide liver protection, improve eye sight and blood quality. Their main health benefit is to nourish the body, as they are perhaps the most nutritionally rich berry-fruit! They are a complete protein source, and contain nineteen different amino acids and all eight essential amino acids. Goji Berries contain 21 or more trace minerals, the main ones being, Zinc, Iron, Copper, Calcium, Germanium, Selenium and Phosphorus as well as vitamin B1, B2, B6 and vitamin E!
The reason that I love these so much around this time of year is they are packed full of Zinc and other very helpful nutrients to help our bodies adjust into the Autumn and keeping any colds at bay. These are also really great if you are cutting down on sugars as these are low Gi and use no added sweetener except the natural sweetness of the berries.
