Cauliflower Fritters

You could also call these “using what ever¬†is left in your fridge Fritters!” but that’s a bit of a mouthful. no pun intended.. ūüėČ

This recipe is great for when you haven’t done your food shop and your running low on most of your veg.. as long as you have eggs these fritters make a great breakfast, lunch or light dinner!

Cauliflower Fritters

Ingredients:

  • 3 eggs
  • 1 cup of mashed (already cooked cauliflower ) or any other cooked left over veg in your fridge
  • 1 spring onion, finely chopped
  • 2 tomatoes, diced,
  • sea salt
  • black pepper
  • 1/2 a red onion finely chopped
  • 1 tbsp Coconut Oil

Heat a saucepan with the coconut oil on a medium heat.

Whisk the eggs and season with sea salt and black pepper.  Add in the Spring onion, tomato, red onion, cauliflower. Mix well.

Put 2 x tbsp of the mixture into the pan for each Fritter. These take about 3 minutes on each side, flip until each side is nicely coloured.

(optional – you can top with a poached egg )

An excellent source of Vitamin A and protein!

Coconut and Strawberry Bomb Pancakes

OMG! These are the best pancakes I have had in a lonnnng time. I’ve been playing with pancake recipes for a while and only using healthy whole ingredients, these are Veggie, Paleo, Gluten Free, Dairy Free, Sugar Free and oh so good .

 

Coconut and Strawberry Bomb Pancakes

Here’s what you’ll need:

  • 2 eggs
  • half a mashed banana
  • 1 scoop of protein powder
  • 1 dropperful of stevia
  • pinch of Vanilla powder
  • Cinnamon
  • Desiccated Coconut
  • Strawberries
  • Xylitol
  • Coconut Oil x 1 tbsp

Whisk the eggs until frothy, add in stevia, vanilla powder and the mashed banana.

Heat a saucepan and add the Coconut oil. Keep on medium heat, add in 2 tbsp of the mixture for each pancake. They usually take about 2-3 minutes on each side. Golden brown is always better ūüôā

Once the pancakes are cooked, place one on a plate, sprinkle with cinnamon, desiccated coconut and strawberries topping with a sprinkle of Xylitol.

 

Then place another pancake on top and repeat!

 

and repeat! Until you have a tower of delicious pancakes, strawberries, coconut and cinnamon yumminess!! Serve warm, the strawberries turn gooey and jam like.

 

This mixture made around 5 pancakes, great for sharing, a perfect weekend breakfast, brunch or dessert!!

Carob Crunch Bars

Another carob recipe!! I am loving Carob and I love that I can eat these without feeling a little burned out , like I can sometimes after too much Cacao powder!

Ingredients:

  • 1 cup of Cacao Butter
  • 1/2 cup of Goji Berries
  • 1/4 cup of hemp seeds
  • 1 dropperful of Stevia
  • 2 tbsp of Carob
  • 1/2 tbsp of Lucuma
  • 1/2 cup of Desicatted Coconut
  • 1/2 tbsp of Maca

Melt the cacao butter over a low heat. Once melted pour into a rectangle dish,( I use Tupperware,) add in the carob, lucuma, maca and stevia. Stir well. Sprinkle on top the Goji berries, then the coconut and finally the hemp seeds. Push the topping into the mixture so they will set properly in the bars.

Place in the freezer for 20 minutes, once set, cut into bars. Store in the fridge ūüôā

Carob Cinema Snacks

Sometimes I like to lay off the Cacao powder, as it is a natural stimulant and if overused could make your adrenals a little unhappy. I like a break every now and then.

So I’ve been playing with Carob Powder instead, I love the taste of carob, its kind of like¬†caramel, it;s a very unique¬†¬†sweet taste and I like to mix it in my sweet treats for that chocolate look!

These were delicious and named Carob Cinema snacks as I took them to the movies the other night and they are my favourite now, so I will be making them especially for movie nights, instead of popcorn!

Carob Cinema Snacks

Ingredients:

  • 1 cup of Cacao butter
  • 1 dropperful of stevia
  • 1/4 tsp Vanilla powder
  • Hazelnuts handful chopped
  • 1/2 cup Goji Berries,
  • 1/4 cup Coconut flakes
  • 2tbsp Hemp seeds
  • 2 tbsp Carob powder
  • 1/2 tbsp Mesquite powder

Melt the Cacao butter over a low heat,  transfer to a bowl and mix in all the other ingredient, mix well.

Spoon into a dish/ tub you can place in the freezer, set for 20 minutes and then break into squares.

The health benefits of Carob:

One of the benefits of carob in the diet is its effects on digestive health. Carob helps to regulate the digestion process, while serving as a natural anti-allergic, antiseptic, and anti-bacterial agent. It contains tannins that are rich in gallic acid, which give it its beneficial effects. Additionally, carob provides powerful anti-viral benefits that supply the body with essential antioxidants.In terms of other nutrients, carob boasts a significant amount of calcium.

Berry Bliss Bars

These bars are super tasty and also very low on sugar which is perfect for a healthy tummy ūüôā

I’ve been focusing on the following natural sweeteners lately :

  • Goji Berries,
  • Lucuma
  • Stevia

This is the recipe I came up with using these 3 ingredients.

Berry Bliss Bars

Ingredients:

  • 1 cup of Cacao Butter
  • 1 tbsp Lucuma
  • 1/2 cup Goji Berries
  • handful Hazelnuts chopped
  • 1/2 cup desiccated Coconut
  • 1 droppeful of Stevia

Melt the cacao butter over some hot water or on very low heat in a pan.

Once melted mix in a bowl the Cacao butter and all other ingredients.

Pour into a dish, I used a rectangle shaped Tupperware box.

Place into the freezer for 20 minutes to set. Once set push out and cut into bar shapes .

Natural Lip Treatment Moisture Mask (Chemical Free)

It’s getting quite cold here in the Uk, I like to call it “fresh” ! ūüėČ

I love Autumn, its so pretty and I love wrapping up in Warm scarfs and gloves and big coats. BUT it’s a challenge for our skin to go from the central heating into the cold and you may notice your skin becoming flakey and a little dry…

 

There are several ways to support your skin :

 

  • Drink more water, stay hydrated
  • Feed your skin with good fats – Chia Seeds, Fish oil, Krill oil, Avocado
  • Get your greens in your diet, either through a large salad, a green juice or Smoothie, or/and a green food powder.
  • Exercise, get the blood pumping to all areas! Gives you a healthy glow, and lets your body detox through your skin
  • Take a Probiotic, a healthy gut is healthy happy skin.

  • Coconut Oil, great moisturiser, hair treatment, heat-resistant cooking oil ( Great all-rounder!)

 

I wanted to share a quick homemade Lip treatment / Lip mask I use in the colder months to keep my lips super soft and moisturised and happy!

Natural Lip Treatment Moisture Mask (Chemical Free)

All you need is 2 things!

  • Manuka Honey
  • A Toothbrush

It’s so easy all you need to do is apply some honey onto your lips directly, rub it in and leave for 5-10 minutes, trying not to lick it off! ūüėČ

Then wet your toothbrush and massage the lips in little circles with the brush, removing the honey at the same time.

You’ll be left with super smooth lips, totally kissable ūüôā

Give it a go and your lips will love you for it.

Chocolate Orange Mousse for One

I usually have a Juice for Breakfast, but today I felt like being different and indulging a little! I’ll save my juices for the afternoon instead.

I came up with this chocolate mousse recipe whilst playing in the kitchen a couple of weeks ago, I tweaked it slightly today and came up with the best one yet! So I wanted to share with you. It’s a perfect amount for one person if your really hungry or you can share between two and still have a good amount… I ate it all myself ūüėČ

This is great if you are cutting out sugar and still want a sweet treat.. using stevia as a sweetener.

 Chocolate Orange Mousse for One

 

Ingredients:

  • 1 ripe avocado
  • 1 tbsp Chia seeds
  • 1 tbsp Raw Cacao Powder
  • 1/2 tsp of cinnamon
  • pinch of vanilla powder or half a vanilla pod (de-seeded)
  • 3/4 cup of Coconut Milk
  • 1 dropperful Stevia ( Orange Nu Naturals is the one I used for the Chocolate Orangey flavour)
  • pinch of sea salt
  • Cacao bean for presentation ūüôā (optional)

Add everything to a blender and blend until smooth, stirring in between to make sure everything is mixed well.

You can put in the fridge for 30 mins to set and become thicker, or serve and eat straight away!
