Toasted Pumpkin Seeds

It’s nearly Halloween & I am in Love with Pumpkin soup at the moment. I bought a pumpkin especially to carve a pumpkin face.. but it went wrong ūüė¶ oh well.. i’ll just have to buy another pumpkin and make even more soup!

I didn’t want to waste the pumpkin seeds that i’d scooped out of the middle of the pumpkin, so I decided to make a quick and easy recipe with them.

All you need is :

  • Lemon juice
  • Sea salt
  • Coconut oil
Rinse off the seeds and dry them. Then cover in coconut oil, then lemon juice and sea salt. Place in the oven @ 200 c for 15- 2o minutes.
They should be a lovely golden brown and crispy.
Sooo moorish, i’ve eaten mine already.
