It’s nearly Halloween & I am in Love with Pumpkin soup at the moment. I bought a pumpkin especially to carve a pumpkin face.. but it went wrong 😦 oh well.. i’ll just have to buy another pumpkin and make even more soup!
I didn’t want to waste the pumpkin seeds that i’d scooped out of the middle of the pumpkin, so I decided to make a quick and easy recipe with them.
All you need is :
- Lemon juice
- Sea salt
- Coconut oil
Pumpkin seeds contain essential vitamins and minerals and taste great when roasted. Pumpkin seeds are a good source of:
- Vitamin E
- Omega-3 fatty acids
