I get my Vegan Bake – On!

I usually make all my cakes & treats raw! but time had come where I felt drawn to trying my hand at some Vegan Baking with my girlfriend.  We went to the local Health Food shop to get the ingredients we didn’t have in our stocked high Raw vegan cupboard.

Rice Flour – Gluten Free

Baking Powder – Gluten Free

Xylitol – natural sweetener

We decided that we would  bake some healthy vegan cookie’s – and by using Gluten free flour &  xylitol we could still keep them super healthy and our bodies would love us and stay happy.

I’ve just recently bought a new vegan cook book  (Skinny Bitch : Ultimate everyday cookbook) by the inspirational Kim Barnouin, I love her  tongue in cheek “Foul” language! It’s a must have book  just for that 😉

We made the white chocolate chip cookies from this book, although I substituted the vegan white chocolate chips for Raw chocolate chips I made myself.

I have to say the cookie dough was yummy and we ate a fair bit before it was even cooked! and scraped out the bowl 🙂

I was also inspired to make some “mookies” which I read about on queerveganfood.com, a fellow Sarah and also a fellow “Queer” posted her recipe of a cross between a cookie and a muffin.. I had to try them!

These were hands down our favourites out of the all the cookies we made and we made a lot!

We served our Cookies with some freshly made Almond Milk. Perfect combination.

This perfectly combined with settling down to watch some Dexter (another  non guilty pleasure of ours)

Our verdict of Vegan baking, is that new to this I definitely need practise! I haven’t baked a cake or dessert in such a long time.

I’ve realised how much I appreciate my Raw Vegan desserts, as for me nothing can replace these.

So whilst I now feel the urge to master the world of healthy Vegan baking, I know in my heart of hearts that MY heart lies with The Raw vegan delicious treats. I do however like that I have opened my options up and  that I can choose to bake with the use of Gluten free flour and sugar-free sweeteners if I wish too.  Oh yes and our housemate Yangtze said she liked them too! ” They taste just like cake” yep thats what we wanted a soft, squishy, moist cookie.

Next up .. something with the silken tofu that we bought!  Recipe: I can’t believe its not cakes frosting…

I’m Nutty about Fresh Almond Milk .

Oh Almond milk how I love you!

I don’t like Dairy & it doesn’t like me.. so I’m cool with that and  we avoid each other.

I do however like my “milk” when it’s made from Almonds. Not only is it loaded with vitamin E, making my skin all glowie and smooth, it also loves me as much as I love it, which means great digestion and no more skin condition.

Soo easy to make, all you need is:

  • Blender
  • Almonds
  • Dates (Medjool are the way)
  • Sea salt
  • Filtered Water
  • Nut milk bag
Blend 1 cup almonds with just under 1 litre of filtered water, add pitted date and pinch of sea salt. Once smooth strain through a nut milk bag, separating the pulp from the liquid.
Ta da! Pour over yummy raw breakfast’s, blend with smoothies, make ice-cream.. here are some of the things I do with it:

Country Bumpkin Soup

I make pumpkin soup AGAIN! I have seriously eaten about 3 batches this week already. I love it, just can’t get enough.

My attempt at carving a pumpkin face – failed! At least I still get yummy soup 🙂

Check out my recipe, it’s sooooo easy!

  • Pumpkin
  • Onion
  • cinnamon
  • paprika
  • nutmeg
  • Coconut oil
Fry the onion in Coconut oil, then add chopped pumpkin, add water to pan, simmer for 20 minutes. Then add to blender, add spices and blend. Season with salt & pepper & serve!
Here are some nutritional facts about pumpkins another good reason to make this soup..:

Pumpkin is low in fat and calories, but rich in these nutrients:

  • Alpha-carotene
  • Beta-carotene
  • Vitamins C and E
  • Fiber
  • Potassium
  • Magnesium
  • Pantothenic acid

Alpha-carotene and beta-carotene both work as antioxidants in the body and are pro-vitamin A carotenoids, meaning they’re converted to vitamin A by the body.  Carotenoids boost immunity and reduce heart disease risk.  Beta-carotene may help reverse skin damage caused by the sun and act as an anti-flammatory.  Alpha-carotene is also thought to slow the aging process, prevent tumor growth and is very good for your eyes, helping reduce the risk of developing cataracts.

Pumpkin is a great source of fiber, with one half cup containing 5 grams of fiber.  We all know the benefits of fiber; it reduces bad cholesterol levels, protects the body against heart disease, helps control blood sugar levels, promotes healthy digestion and may also play a role in weight loss.

Pumpkin is rich in Vitamin C, which boosts immunity, reduces the risk of high blood pressure and heart disease and aids regulation of cholesterol levels.  A good source of Vitamin E, pumpkin promotes healthy skin by protecting the body from sun damage and may also reduce the risk of Alzheimer’s and certain cancers.

So yes A LOT of good reasons to eat pumpkin this Halloween.

Toasted Pumpkin Seeds

It’s nearly Halloween & I am in Love with Pumpkin soup at the moment. I bought a pumpkin especially to carve a pumpkin face.. but it went wrong 😦 oh well.. i’ll just have to buy another pumpkin and make even more soup!

I didn’t want to waste the pumpkin seeds that i’d scooped out of the middle of the pumpkin, so I decided to make a quick and easy recipe with them.

All you need is :

  • Lemon juice
  • Sea salt
  • Coconut oil
Rinse off the seeds and dry them. Then cover in coconut oil, then lemon juice and sea salt. Place in the oven @ 200 c for 15- 2o minutes.
They should be a lovely golden brown and crispy.
Sooo moorish, i’ve eaten mine already.
A reason to make these is also the great nutritional benefits:

Pumpkin Seeds

Pumpkin seeds contain essential vitamins and minerals and taste great when roasted.  Pumpkin seeds are a good source of:

  • Vitamin E
  • Iron
  • Magnesium
  • Potassium
  • Zinc
  • Omega-3 fatty acids

Come and eat your cake Guilt free with me!

I love my cake guilt free ! It’s the best way to eat it & the Healthiest.

I’ve been experimenting with my Raw desserts and this is my most recent addition to the menu of Skinny Mini Cakes (www.skinnyminicakes.com) and I’m so glad that everyone likes it as much as I do!

I’m very lucky that I get to do my own taste testing, although i did lovingly manage to save my girlfriend some … (scored brownie points / healthy cake points) ! ;)

I will be posting a vlog recipe very soon of another one of my favourite’s and show you how to make it step by step.
